The legendary Tajima beef, Tajimagen
- こだわりの鮮魚 -
The meat offered at Gokanshi is the genuine and mythical Tajima Gen beef, which is said to be mythical even among Tajima beef cattle, and is raised on contract farms with lots of love, high-quality feed and an excellent environment, with only around 10 cattle shipped per month.
The fat melts at a much lower temperature than that of regular Japanese Black Beef, and is smooth and similar to tuna fat. When you put it in your mouth, the sweetness of the fat spreads softly, followed by a rush of the natural umami flavor of the meat.
